"Discovery" for an initial approach or "Immersion between lake & mountains" for a full awareness of the surroundings, our menus are an invitation to let go.

Each meal is a culinary and oenological journey, complemented by extractions and juices made from wild or cultivated plants.

Just as Impressionist painters captured the vibrations of the moment, we convey our interpretation of the nature surrounding Lake Geneva and the Chablais massif.

Emotion, fleeting sensations, yet a mental construct resulting from a lifetime of experiences.

Between dishes and wines, vibrant pairings

Thanks to a new wine cellar, our selection of wines and spirits has been significantly expanded, in line with the identity of the House. We favor winemakers with a genuine environmental approach, unique terroirs, and artistic signatures, for living wines. Throughout the year, we seek out great vintages and exclusive wines that share this philosophy, blending cultural dimensions with respect for nature. Our aim is to create an inspired wine list, balancing exceptional wines, emerging talents, and aged spirits.

The Alpine Arc is highlighted, spanning from Savoie to Austria, through Switzerland and Italy. Noteworthy wines from beyond our borders complement this refined selection, the culmination of our travels through vineyards.

The goal is to create pairings that engage the olfactory, tactile, and gustatory senses. Delicacy, length on the palate, and complexity are a continuous quest to craft vibrant pairings.

Pauline Goldin,
Head Sommelier
of Wine at the Mill

Since January 2023, Pauline Goldin has been the Head Sommelier and Dining Room Manager. Pauline's journey is quite unconventional; she started her career in law but discovered that her true passion lay elsewhere. After a distinguished career in Michelin-starred restaurants, she enthusiastically joined Le Moulin de Léré, captivated by the identity and charm of the establishment.

“Frédéric’s cuisine is committed. I love the unexpected pairings that lead to a sense of inevitability.

The establishment embraces its philosophy and isn’t shaped by conventions, which I find incredibly appealing. We are at the heart of nature and authenticity.

Far from rejecting the conventional, I have a fondness for biodynamic or natural wines, which, in my view, are the most accurate reflection of a winemaker’s identity when climatic conditions allow. Human perception and sensitivity resonate with these wines: there’s joy in selling a bottle through which the winemaker tells their story.

Just as Frédéric tells the story of a leek cooked over the fireplace through its depth of flavor, without ever altering the original product, I thrive on finding a wine in perfect harmony. For example, this 2020 Pinot Gris from Lissner with its smoky nose and nutty notes reminds me of the leek reduction, and the singularity of a dish driven by the fresh and powerful mouthfeel of the wine. It’s an endless passion.”
