Honesty and Sensitivity
“Before coming here, I traveled a lot in France. I’d been thinking for some time about leaving big cities. I searched for a long time for a small family restaurant with a high level of quality. Here, I found something honest and sincere.” – Marta, Chef de Partie.
Proximity and Terroir
“I always wanted to learn about working with wild plants, local and seasonal products, and meeting producers to put a face to the people who bring us the fruits and vegetables.” – Jean-Eudes, Chef de Partie.
Transparency and Adaptation
“This is a transparent cuisine. The féra really comes from Lake Geneva, and the tomatoes really come from Chablais. When there are no more truffles, we stop with truffles. And when mushrooms arrive at 5 p.m., they’re on the plate by 7 p.m. We’re constantly adapting. There’s no routine.” – Alexis, Chef de Partie.
Career Progression
“When I moved to the region, I was looking to join a small, family-oriented structure with shared values and a place that would give me a chance to grow professionally. Mission accomplished!” – Manon, Executive Assistant, formerly Housekeeper.
Product Knowledge
“The strength of the house, in my opinion, is the understanding and appreciation of the product in its entirety, from its origin to the plate.” – Guillaume, Apprentice Cook.
Mutual Support and Solidarity
“Here, it’s a small team, but a united one. We can count on each other, which is one of the strengths of the inn. Everyone helps everyone.” – Cloé, Housekeeper and Breakfast Service.
